Have your Cake and Knit it, too

In this difficult and tumultuous time, here is a video to sweeten your day. I am not sure how those cakes would taste, but they are for sure a feast for the eyes.

The cakes in the video are made by Luke Vincentini, an independent cake artist who formerly worked at the famed Carlo’s Bakery in New Jersey. Now, the talented baker is making headlines with his own cakes that are hyper-realistic depictions of food, beverages, and other items.

Vincentini first taught himself how to bake by watching cake shows and YouTube videos. That shows in his visual presentations, which are tailor-made for Instagram. He first got the idea for the cakes after looking at a bag of Doritos. He makes the cakes by first dirty icing them (using a thin layer of icing that catches crumbs and acts as an adhesive) with buttercream, then layering fondant and modeling chocolate on top. He’s meticulous with the designs, the Doritos bag took close to 14 hours to make.

Ready for your own cake? Below is my favorite and super-easy recipe for the best Key Lime Pie, the perfect treat for hot summer days.

The Best Key Lime Pie Recipe by Elisabeth Drumm

Ingredients:

Graham Cracker crust (ready made from the grocery store)

Sweetened Condensed Milk (1 can)

Lime or Lemon juice (about a cup)

Whipped Cream (about a cup)

Preparation:

Pour the Sweetened Condensed Milk into a bowl and add the Lime Juice. Mix with a whisk. Add more Lime Juice according to taste (I prefer a tart taste, so I use quite a lot). Add the Whipped Cream and gently blend everything. Pour the mixture into the Graham Cracker crust. Cover and place into the freezer. Allow to freeze solidly overnight. Voilà !

The pie can be cut with a knife even when frozen and should be served frozen. Keep the remainder in the freezer.
