Nut Cookies -- Healthy & Delicious, Quick & Easy

 

I am one of those people who never turns down a good cookie. Yes, I admit I love anything sweet: cookies, cheesecake, pastries, chocolate - I take it. I came across a German recipe for Kekse (= cookies) that is not only quick and easy, but also healthy and delicious. Can't argue with a quadruple win!!

Here it is:

200 gr nuts + seeds

50 gr oats

1 egg

2 tablespoons sugar

2 tablespoons honey

little bit of vanilla extract

Use whatever nuts and seeds you have at hand. Sunflower seeds, sesame seeds, chia seeds, almonds, peanuts, cashews, walnuts.... mix and match. I chop up the nuts a bit.

It says 2 tablespoons of sugar, but I found that one is sweet enough. Try it.

Variations: add some dried fruit, like raisins or cranberries. Small chocolate chips also work well. Chocolate is always a plus.

Mix everything together in a small bowl and form little mounds on a baking sheet.

Bake at 325 degrees for about 20 minutes.
